Nicoya is a sparsely-populated rural peninsula jutting roughly 50 miles into Costa Rica's Pacific coast. The geology is unusual: a limestone aquifer delivers drinking water with the highest calcium and magnesium concentrations recorded anywhere in the country. Those two minerals appear repeatedly in the research on cardiovascular health and bone density, and Nicoyans absorb both every time they fill a glass.

The Chorotega indigenous heritage shapes the diet in ways that compound that advantage. Corn is nixtamalized, soaked and cooked in an alkaline lime solution, a process that releases bound niacin and triples the calcium content of each tortilla. Black beans are eaten daily. Papaya, squash, citrus, and yucca round out a diet that is calorie-modest and micronutrient-dense by default, not by design.

Demographer Luis Rosero-Bixby and the Dan Buettner research team identified Nicoya in the mid-2000s by following mortality records that showed a dramatic survival advantage concentrated in men over 60. The advantage was not explained by income, healthcare access, or formal education. It emerged from the specific combination of what Nicoyans eat, drink, and believe about their place in the world.

That belief has a name: plan de vida, a clear, family-rooted sense of purpose that gives each day direction. Elderly Nicoyans do not retire from life; they remain active caregivers, grandparents, and small-scale farmers well into their 80s and 90s. Physical labor on the land continues because the land requires it, which means no separation exists between daily work and daily exercise. The severe afternoon heat enforces a natural rest period built into every workday. Weekly Catholic Mass provides a reliable rhythm of community gathering. The result is a population that ages inside structure, social, physical, and spiritual, rather than against it.
